If you have been to one of my classes, you may have had an almond 'welcome' biscuit. These biscuits are not only easy to make, they are absolutely delicious, gluten free and healthy! What more can you possible ask from a humble biscuit. Here is the recipe.
Ingredients
250g almond meal
180g caster sugar
3 egg whites
100g flaked almonds
zest of one lemon
Method
Heat oven to 180C.
In a clean dry bowl, whisk TWO of the egg whites until soft peaks form. In a seperate bowl mix the almond meal, sugar and lemon zest until combined and then add the whisked egg whites. Using your hands mix until a dough is formed (it will be a bit sticky). Roll the dough into small balls the size of walnuts (or a bit smaller).
To finish biscuits, line a baking tray with baking paper. Take 2 clean small bowls and in one add the remaining egg white (as is, not whisked) and in the other add the flaked almonds. Taking a biscuit ball at a time, dip it in the egg white and then coat with flaked almonds. Place on the tray and repeat for remaining bisucuits. Leave a 2cm gap between biscuits as they will spread when they cook. Bake for 15 - 18 minutes or until just golden. Remove from oven and let cool a bit before eating.
They will keep for 4 days in an airtight container (if they last that long!).
